Cauliflower and cheese casserole

Here’s a tasty and creamy Cauliflower and Cheese Casserole recipe that’s perfect as a side dish or a vegetarian main course. It’s rich, comforting, and a great way to enjoy cauliflower!

Ingredients:

  • 1 large head of cauliflower, cut into florets
  • 1 cup shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • 1/2 cup grated Parmesan cheese
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika (optional)
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for topping)
  • 1 tbsp melted butter (optional, for topping)

Instructions:

  1. Preheat the oven: to 375°F (190°C). Grease a 9x13-inch casserole dish or a similar-sized baking dish.

  2. Cook the cauliflower:

    • Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5-7 minutes, or until tender but still slightly firm.
    • Drain the cauliflower and set aside.
  3. Prepare the cheese sauce:

    • In a medium saucepan, melt 2 tablespoons of butter over medium heat.

  5. Prepare the topping (optional):

    • In a small bowl, mix the breadcrumbs with melted butter (if using).
    • Sprinkle the breadcrumb mixture evenly over the top of the casserole.
    • Sprinkle the remaining Parmesan cheese over the top as well.
  6. Bake: Bake for 20-25 minutes, or until the top is golden brown and the casserole is bubbly.
